Menu Mondays

Happy Labor Day!  I've done some shopping this week and have some fun meals planned - here it goes!

Monday - Steamed Crab and shrimp cocktail w/ corn on the cob
Tuesday - Steaks w/ summer vegetable tian and homemade applesauce
Wednesday - Taco Soup w/rolls
Thursday - Honey Glazed Salmon w/butter lime sauce
Friday - Crab/Peach wontons
Saturday - Hotdogs and Brauts

The weather is changing and I'm so excited to put up some fall decor and get some soup going!

Menu Mondays

I've started the Couch to 5k program - so that maybe in the near future I can run a mile without dying by the end.

So in honor of trying to shed some pounds and become an healthier me - I should probably start with a better diet.  I'm not a big dieter - I need to take the coke out - but other then that I'm starting with eating at home - which always makes me eat a little healthier and I control my portions.  So these meals may needs seem healthier - but they are better than a cheeseburger!

Monday - Pesto Chicken, fruit, and salad
Tuesday - French Dip Croissants 
Wednesday - Chicken Tortilla Stack
Thursday - BBQ chicken on rolls
Friday - Tuna Melts

Also need to use what I have on hand!

Menu Mondays

Wow its been awhile since I posted a menu!  But this week I'm starting a new life - I worked out - I've eaten well - and I'm going to try to cook a few meals at home.... what a concept.  Mike asked me a week or two ago if my goal was to eat out every single night.... why yes - yes it was!

I'm almost at 10,000 steps today and will for sure get there by the end of the night - so here's to a good start!

Monday - Tortellini w/Caesar salad
Tuesday - Turkey meatball and Pineapple skewers (real easy - meatballs from costco -marinate in teriyaki sauce w/pineapple and grill
Wednesday - Steak, salad, and fruit
Thursday - Boys fend for themselves - I've got a shower
Friday - Pesto Chicken and fruit
Saturday - another shower - whats going on?

My goal is 10,000 steps a day - which I usually can't do without a little workout - so hopefully that will keep me motivated!

Off to make dinner!

Tuesday - Coconut Curry Chicken w/fruit
Wednesday - Teriyaki Chicken meatballs w/watermelon
Thursday - Spaghetti, Cesar Salad
Friday - Tacos

Menu Mondays

Another week - another menu - getting ready to start my casserole - this has been on my list for awhile and I somehow always end up missing it.  Not tonight!

Monday - Meatball Sub Casserole w/watermelon
Tuesday - Steak, baked potatoes, homemade Cesar salad
Wednesday - Game night - probably eat out
Thursday - Sour Cream chicken Enchiladas
Friday - Tacos w/watermelon

I'm getting the grill out this week - LOVE GRILLING season.  On the look out for new recipes to try!

Menu Mondays

Monday - we call it al la carte at my house - everyone eats what they want - we have leftover Spaghetti, chef salad, and mini bagel sandwiches (mini bagels, cream cheese, turkey and cheese - so yummy!)

Tuesday - Balsamic Honey Chicken w/salad and fruit
Wednesday - Shredded BBQ chicken sandwiches w/pretzel jello
Thursday - Ham and Cheese Hot Wheels w/fruit
Friday - Cashew Chicken w/rice
Saturday - Meatball Sub Casserole w/salad

This week I'll also be trying a Scrambled Omelet and Eggs in a whole for breakfast. And these easy pizza's for lunch with the kids

Menu Mondays

So last week I had a birthday and as I get older - it gets harder.  We spent a lovely week in Vegas and Newport Beach.  I spent one afternoon at the beach - and fried my face.  Ever since I got home I keep thinking - I should have put sunscreen on.  A thought I have rarely had in my life.  I'm a big believer in the sun is good for the soul and my mom taught me at a very young age how to be "one with the sun".  But as I get older I start to think about skin cancer - and ugly sun spots - and wrinkles....(Ok I'm not really worried too much about wrinkles - I think they add character).  But this last week I have thought a lot about my health. 


I am getting older and my kids are still young.  I need to be around for them.  I want to be healthy and active with them.  I am and have been since giving birth to Sam at my all time high - and I've been too busy with kids and work and quilting to make getting healthy a priority in my life.  I'm not a dieter and I have NO will power.  ZERO.  I start eating good - and someone offers me a donut 3 hours later and I'll eat it.  So clearly I have a life style change ahead of me.  I decided this year - is my year to get in shape and feel healthy.  I don't get enough sleep, I feel sluggish, and most my life is ran on Red Bull.  I hope over the next few months I can change things up every week to progress and make life long changes.  I'm not a all or nothing kind of girl - I'm going to do this gradually - and this week I'm going to start with cooking decent meals at home - and adding a little workout to give me some energy and get me going.

Monday - Baked Chicken Pesto (Jake's Favorite!)
Wednesday - Sloppy Joe Pizzas
Thursday - Melt in your Mouth Chicken w/salad and fruit
Friday - Tacos w/fruit
Saturday - Chicken Enchiladas

 
A lot of chicken on the menu this week - but I'm trying to get through what I have in the fridge.  Trying some new recipes to get me motivated I'll let you know how they turn out!

Menu Mondays

I try to create a menu each Monday to help in my efforts of my mad dash to figure out what to do for dinner.  Some weeks I follow religiously - some weeks not at all.  This year in an effort to save money, be healthier, and to help us manager our nights better I am really going to try hard to stick with it!

I need some help and some good recipes!  Send links me way - I'd love to try some new fresh ideas!

Last week, I cleaned out my fridge in an effort to figure out what I have at home.  Trying to go through what I have.  Who knew I had SO MANY FROZEN VEGGIES in my freezer! 

I also tried this delicious crockpot breakfast casserole last week - try it - you won't regret it!  I mixed all different kinds of peppers with my sausage and added a white onion there - and used egg beaters.  Worked out great.

Monday - Tuna Fish Sandwiches w/ homemade applesauce
Tuesday - Honey Balsamic chicken w/steamed broccoli and cheese
Wednesday - Meatball Casserole
Thursday - Ham and Cheese Pinwheels
Friday - Parent Survival night - eat out!
Saturday - Turkey lettuce tacos

I'm hoping trying some of these new recipes gets me going and excited!

Soup season!  I've been lunching on Taco Soup since Halloween - love this time of year!

Menu Mondays

The weather here is a little cloudy and rainy - we have a rain/hail storm that was insane this weekend!  Last weekend we had a lightening storm - the sky was going from pitch black to blue every time the lightening struck. 

All this weather has made me excited for fall.  School started for Jake today (more on that tomorrow) and I feel the need to organize and structure our family lives a little more from our normal and from our crazy never go to bed summer schedule! 

With that - comes home cooked meals - and dinner as a family.  We have never been good about sitting around and talking during dinner.  Its usually "hurry and eat" so we can rush off to the next event. Or Mike and I catching up on our day - and the kids are playing games while eating.  Its time to veto the ipads from the table and connect. 

So in light of my new found self - I've got a good menu planned for the week!

Monday - Pesto Chicken w/fruit (Jake's choice as he back to school special meal)
Tuesday - Manicotti w/salad and garlic toast
Wednesday - Egg Sandwiches
Thursday - Chicken meatballs stir-fry w/fruit
Friday - Tilapia w/ salad and fruit

I feel soups coming on in the next few weeks?  Any great soup recipes out there I should be trying?

We did pretty good last week - and I have to say this Pork Tenderloin recipe is the best!  I made it with some roasted asparagus with melted Swiss cheese.  It was delicious!

Menu Monday

It was a busy weekend and I'm so ready for summer!  Got all our planting done, backyard cleaned up, patio furniture washed and cleaned up.  Pool is open and the weather is perfect!  So excited for grilling season to be here.  I always feel like I eat a little better when I throw something on the grill and pair it with fruit or a salad.  Easy, no clean up, and the boys think its fun to eat outside!

Updates

We had a busy weekend -

- pedicure with my mother in law
- spent all day Saturday quilting - got 5 done
- Sunday was spent cleaning and quilting - 2 more completed!

Practicing my channel lock quilting

- Made these Oatmeal Chocolate chip bars from Pinterest - may be the best recipe I've found so far!
- busy week at work - got a few quilts bound while on an all day conference call

 
 
 
- Long days at work hopefully mean a few more quilts bound this week!

Menu Mondays

It's been awhile! I have a goal this week - and only 1 goal.  To lose weight!  I'm going to be so hungry and so onary by Friday - but I'm going to do it!

Monday - Pesto Basil Tilapia w/salad (demoing Tilapia at Costco and Jake LOVED IT!)
Tuesday - Basalmic Grilled chicken w/ fruit
Wednesday - Chicken Broccoli Casserole w/grapes
Thursday - Bean Burritos w/edamame
Friday - Turkey Meatballs w/pineapple

For the rest of my meals - I'm focusing on fruit and protein - like edamame, hummas, cottage cheese w/tomatoes.  Maybe throw in a little oatmeal to feel full!

Goal is to eat good - and get active this week!

Menu Mondays

I say this all the time - but I have trip next month - and I would really love to lose 10 pounds before I leave.  So I am going to eat less, jump on the low carb menu Mike's been doing - and see what happens. 

I may even give up the coke...not the Red Bull...but the coke and drink more water which will help in the fight against my Red Bull addiction! 

Monday - Egg Salad Sandwiches w/fruit
Tuesday - Taco Salad
Wednesday - Chicken Salsa
Thursday - Steak w/ salad
Friday - Chicken Meatballs w/Pineapple

Trying to use up what I have in the freezer - so here's a start.  My goal this week is smaller portions and low carb.  Wish me luck!
